Cardamoms, also called Elaichi, is warm, fragrant and highly mysterious having a unique and pleasant fragrance and is an inseparable part from Indian sweets. Elaichi has a plethora of health benefits that are mentioned in Ayurveda and are used extensively in ancient and traditional medicines.

Cardamom is basically of 2 types- Green Cardamom and Brown Cardamom-
1. Green Cardamom:
This variety comprises of fat green pods and is of the most superior quality of cardamom available. It can be used as a whole or can be ground to fine or coarse powder. It is used to flavor both savory and sweet dishes and it adds fragrance to curries and milk based preparations; also used to flavor tea and coffee, spiced cakes and Indian breads.
2. Brown Cardamom:
This variety are larger in size and have a hairy texture, resembling tiny fibrous coconuts and are used only in savory dishes like biryani and curries and are significant ingredient in garam masala (blend of spices). The dark brown seeds are known for their medicinal value, particularly due to the presence of carbohydrates, protein, moisture, volatile oil, crude fiber, phosphorus, calcium and iron.
