Russian Salads, also called as Oliver Salads, are mostly consumed chilled, that gives in their crispiness and distinct flavour. Dressed in mayonnaise, these salads are juicy, sweet and give out a tangy taste while the fresh cream gives out its lusciousness.
Ingredients:
2 ½ cups chopped and par-boiled mixed vegetables (French beans , carrot , carrots , green peas and potato)
½ cup chopped canned pineapple
½ cup fresh cream
½ cup mayonnaise
½ tsp. sugar
Salt to taste
1 tbsp. mustard powder
2 tsp. ground black pepper.
Recipe:
1.Par-boil or steam the chopped vegetables, drain and chill.
2.Mix mayonnaise, salt, black pepper, cream, sugar and mustard powder.
3.Toss well.
4.Chill for about an hour before serving.
You can serve the salad with fresh brown bread and hot soup.
Alternatively, you can also add apples, grapes, chicken and tuna as well to the salad.
