Sheer Khurma | Ramzan Special

Sheer Khurma, Mughalai traditional dish made during the festival of Eid / Ramzan and  is sweetened with dates. This aromatic pudding finds its origins with the Mughals and in Urdu translates to ‘sweetened milk with dried dates’.

Ingredients:
2 tbsp. -Chironji
50g – Seviyan
2 tbsp. – Raisins
750ml-full cream Milk
75g – Ghee
5-Dates (seedless)
200g-Nestlé Milkmaid Sweetened Condensed Milk
10- Cashew nuts
10-Badam
Rose Water – 1 tsp.
Cardamom powder – a small pinch

Recipe:
1.Boil milk in a pan until it shrinks to almost half in volume. Chop the dry fruits and nuts, soak dates in warm milk and set aside.
2.Heat ghee in a pan and roast the nuts and raisins till slightly browned. Set aside and similarly roast the vermicelli till golden brown.
3.In the boiled milk, add Nestlé Milkmaid Sweetened Condensed Milk and bring it to a boil while stirring it continuously, add a pinch of cardamom powder and 1 tsp. of rose water.
4.Add the vermicelli and simmer it till the vermicelli is done. Add the dates to this mixture, stir for 2 minutes. Then add remaining rose water and roasted nuts, stir for about 2 minutes.
5.Serve hot or chilled, as per your taste.
