Ingredients
1 lb. sweet potatoes
1 teaspoon salt
4 onions or spring onions
Juice and zest of 1 lime
3 oz. unsweetened coconut
½ teaspoon chili flakes
3 tablespoons flour
Recipe:
1.Peel and shred the boiled sweet potatoes, sprinkle salt, add finely chopped spring onions
2.Place the lime juice and zest in a processor with the coconut, spring onions and chili flakes. Blend until finely chopped and fully mixed.
3.Place the shredded sweet potato and the coconut mixture in a large bowl, and stir, sift the flour on the mixture, and knead dough.
4.Form 8-12 balls of equal size, and gently press to form patties.
5.In a wok, add some oil and place over medium heat. Fry the patties until golden-brown on both sides.
6.Serve hot with a dip, chutney or ketchup.
