Dark meat is a form of meat which contains a high amount of myoglobin proteins. Myoglobins are the oxygen-carrying pigment found mostly in mammals. Myoglobin is somewhat similar to hemoglobin though this pigment is found in muscles rather than blood stream. The muscles which keep on working have a chance to turn into a dark meat. For instance, due to a lot of walking by chicken and turkey, they used to have darker thighs and drumsticks.
Nutritious Value of Dark Meat
Dark meat is not all bad for you. It does have a lot of nutrients in it when compared with white meat.
1. They are enriched with a number of nutrients like zinc, iron, amino acids, riboflavin, niacin, thiamin, vitamins like Vitamin B6 and Vitamin B12.
2. Dark meat is when compared with tuna contains 11 times more zinc. And, when it is compared with spinach contains 3 times more iron.
3. Dark meats of chicken and turkey are constituted with vitamins like Vitamin A, Vitamin K, Vitamin B6, and Vitamin B12. It also contains minerals such as selenium, phosphorus, and zinc. With all of these dark meats of chicken and turkey also have niacin, folate, and pantothenic acid.
The bad name of dark meat is related to it because of its higher levels of saturated fat. Though, one can remove this high concentration of saturated fat by removing drumsticks and skin from the dark meat.
