The famous street food in China, Manchow soups, have plenty of finely chopped vegetables, simmered in a broth containing generous helpings of ginger & garlic which makes it hot & spicy and the one soup everyone turns to when feeling low. It is the one soup healthy alternative, people like as a comfort food.
Ingredients:
¼ cup shredded cabbage
1/3 cup carrots- finely chopped
¼ cup finely chopped beans
½ cup chopped onions
1 tsp. chopped ginger
1 tsp. chopped and pressed garlic
½ tsp. ginger-garlic paste
1 or 2 finely chopped green chillies
2 tsp. soy sauce
3 cups water
4 tsp. corn-starch dissolved in water
Finely chopped coriander leaves
Chicken pieces (for chicken manchow)
Salt
Recipe:
1. Chop all vegetables and keep them aside.
2. Heat oil in a wok, first add chopped onions, when they start turning brown, add garlic and then ginger, then add green chillies and then French beans and sauté for about 3-4 minutes.
3. Now add, shredded cabbage and carrots and stir for about 5 minutes of medium flame.
4. After they are cooked, add soy sauce and black pepper and chicken (for chicken manchow), stir properly.
5. Add water or veg/chicken broth to this mixture in the wok and allow the soup to simmer and add salt according to taste.
6. Prepare a smooth paste of corn starch with water and add it to the soup slowly and stir well.
7. Allow the soup to thicken by bringing it to a boil.
8. Garnish the soup with chopped coriander and serve piping hot.
