Paneer bhurji is a quick and easy recipe to make, made from crumbled/gratedcottage cheese. Paneer bhurji tastes great with roti and paratha. This is also makes a good stuffing for dosas or even in vegetable Frankie rolls.
Ingredients:
• 1 cup grated paneer
• 1 cup tomatoes chopped
• ½ cup green peas
• 2 tbsp. oil
• ½ tsp. cumin seeds (jeera)
• 2 bay leaves
• 1 tbsp.finely chopped green chilies
• 2 tsp. coriander powder
• ½ tsp. chili powder
• 1 tsp. salt
• ½ tsp. sugar
• ¼ tsp. Garam masala
• 2 tbsp. finely chopped coriander
Recipe:
• Soak the paneer in hot water with ¼ tsp. of salt for five minutes. Drain the water and crumbled the paneer.
• Heat oil in sauce pan over medium heat; after oil is moderately hot add cumin seeds, after they crackle, add green peas & green chili- sauté for about a minute.
• Then add tomatoes, coriander, salt &red chili powder, sauté. Cover the pan and cook for 3-4 minutes till the tomatoes and peas become soft.
• Add paneer and cook for 1-2 minutes. Lastly add chopped coriander leaves to paneer bhurji and mix.
• Serve hot with rotis, plain parathas or stuff in Frankie or dosas.
