Tomatoes and herbs have a very special affinity when it comes to soups. Be it mint, thyme or basil, tomatoes gels well with all of these. In this post, let’s go ahead with the most yummilicious soup ever- Tomato & Mint.
Ingredients:
3 tbsp. unsalted butter
1 medium onion, finely chopped
2tbsp. ginger-garlic paste
4 cups coarsely chopped tomatoes
8 cups Chicken/ Vegetable Stock
2 tbsp. tomato puree
1 small bunch fresh mint leaves
2 cups heavy cream
salt
Freshly ground black pepper
Pinch of sugar
Recipe:
1. Melt the butter over low heat, add the onion and ginger-garlic paste, stirring occasionally, until translucent.
2. Now, add the tomatoes, stock, tomato purée, and mint and increase the heat to high. Bring to a boil, reducing the heat to maintain a steady simmer. Cook, uncovered, stirring occasionally, until the tomatoes soften completely.
3. Now, remove from the heat, let it cool.
4. Once cooled, blend the soup with the help of a blender, whisk in the cream, then simmer, uncovered, add salt and a pinch of sugar, whisking frequently, until the soup is well flavoured and slightly thickened.
5. Serve piping hot with brown bread or pasta.
